Honeydew lime popsicles

Servings: Depends on size of popsicle mold,  6 -10 popsicles 
Special equipment:  Popsicle molds and sticks

Ingredients:

1/4 cup granulated sugar
1/4 cup water
​1 ripe honeydew melon, peeled, seeded, and cut in to 1/2 inch pieces
2/3 cup fresh lime juice

Directions: 

  1. Dissolve sugar in water by stirring if using superfine or by heating in a small heavy saucepan if using regular granulated (then cool).
  2. Blend half of melon and half of lime juice in a blender until smooth. Add syrup and remaining melon and lime juice and purée until smooth. Force purée through a fine-mesh sieve into a 2-quart glass measure or bowl, pressing on solids and then discarding them.
  3. Pour mixture into molds and freeze until slushy, about 2 hours.
  4. Insert sticks, then freeze Popsicles until completely hardened, at least 6 hours.

chilled cantaloupe soup

Serving: 6

5 cups chopped cantaloupe, about 1 melon
1 1/2 cups orange juice
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
2 tablespoons honey
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 sprig fresh mint

Directions:
  1. Place all ingredients, except for the mint, in a large bowl and stir.
  2. Place half the mixture in a blender and puree until smooth. Pour soup into a pitcher, and repeat with remaining mixture.
  3. Taste and whisk in more cinnamon, honey or even lemon juice if desired. It should taste sweet and tart, with only a hint of cinnamon. Chill the soup until ready to serve.
  4. Remove the mint leaves from the stem (discard) and stack the leaves on top of each other. Roll lengthwise into a tight roll. Slice crosswise into thin strips.
  5. Pour the chilled soup into six soup bowls. Garnish each with a sprinkle of shredded mint and serve.

Honeydew smoothie bowl

Serves: 1

Ingredients:

1/2 of 1 honeydew melon
2 tablespoons shredded coconut
2 tablespoons hemp seeds
2 cups kale, stems removed 
1/4 cup old fashioned oats
1/4 cup coconut milk

Directions: 
  1. 1. Combine ingredients in a blender and pulse until smooth.
  2. 2. Transfer to a bowl and add your choice of toppings (Shown here: 2 tbsp chia seeds, 5 strawberries and ¼ cup shredded coconut).

spicy melon salsa

Ingredients:

1 cup chopped cantaloupe
​1 jalapeño pepper, seeded and diced
1/4 red onion, diced
1/4 freshly torn cilantro
1 lime, juiced
1/4 teaspoon salt

Directions:

Combine all the salsa ingredients in a bowl, seasoning with the salt. Toss well and let sit until ready to eat. Serve with your favorite tacos or tortilla chips!
