Switchel

This traditional Vermont beverage features a perfect balance between maple syrup and apple cider vinegar. Used by hay-makers to quench their thirst in the fields during the height of summer, this refreshing drink demonstrates a way to use maple syrup aside from on pancakes!  

food service version

Makes about 80 1/8-cup servings of switchel
Ingredients:
  • 1 Tbsp + 1 tsp. ginger powder
  • 2 Tbsp. + 2 tsp. lemon juice
  • 1/2 cup apple cider vinegar
  • 1 cup maple syrup
  • 8 cups water

Directions:
  1. Place all ingredients in a jar and shake to blend!
  2. Serve chilled as-is or dilute with seltzer. 

home version

Makes about 1 cup (2 servings) of switchel
Ingredients:
  • 1/2 teaspoon ginger powder
  • 1 teaspoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 cup water

Directions:
  1. Place all ingredients in a jar and shake to blend!
  2. Serve chilled as-is or dilute with seltzer.
