Mashed Sweet Potato Recipe
INGREDIENTS
- 2 lbs sweet potatoes (approximately 2 large potatoes), peeled and diced 
- 1 1/2 Tbsp butter 
- 1 Tbsp maple syrup 
- 1/4 tsp cinnamon 
- 1/4 tsp salt 
- 1/8 tsp pepper 
DIRECTIONS
- Cook potatoes in boiling water until tender. Drain in a colander, allowing to steam slightly. 
- Puree sweet potatoes with the butter, maple, cinnamon, salt, and pepper. Do not overmix. 
- Taste and add more salt and pepper, if needed. Serve warm.
